Being busy parents, we fall into the habit of giving our children processed foods, such as a breakfast bar. Research shows, when we eat a protein enriched breakfast we do better in school and at work. A nutritious breakfast keeps us feeling satisfied and focused. Here are a few recipes that can be made ahead of time for a quick, simple, healthy breakfast.
- Scrambled Eggs
- Tortilla shells
- Shredded cheese
To make ahead of time, fill small tortillas with scrambled eggs, chopped bacon and cheese. Wrap in parchment paper and freeze. To serve a taco, microwave it for 1 minute and let cool.
Paleo Breakfast Casserole:
Preheat oven to 350 degrees
- 2 cups Old Fashioned Oats
- 3/4 Cut Natural Maple Syrup or unsweetened applesauce
- 1 Tablespoon Cinnamon
- 1 tsp of baking powder
- 1 cup of Raspberries or Blueberries
- 1 cup of walnuts, chopped (optional)
- 2 cups milk
- 1 large egg
- 1 tablespoon vanilla extract
- 1 banana, peeled and sliced
Combine oats, syrup/honey, cinnamon, baking powder, half of the raspberries and walnuts, mix well.
In a separate bowl combine milk, eggs and vanilla. Stir until the egg and vanilla are beaten.
Spray pan with olive or coconut oil. Spread oatmeal mixture evenly in pan. Dump milky-egg mixture evenly on top.
Top with remaining raspberries and banana slices and bake for 35-40 minutes.
Cut into individually wrapped bars and store in refrigerator, reheat in the morning and enjoy!
